“As Dishes was being developed, we wanted to offer an item
that would make us stand apart,” said Odegard. “We decided
we would do it with barbecue, and had a wood burning grill and rotisserie
built for us in North Carolina. It’s the main attraction at
the barbecue action station.”
Actually, the main attraction might be the whole pig being roasted
for everyone to watch.
Texas-style brisket, St. Louis dry rub ribs, and Kansas City brisket
and links are prepared with spice recipes specific to their region.
Chicken, turkey, salmon, and game hens are also being barbecued on
the grill that only uses hickory, mesquite, and cherry woods.
Odegard researched the perfect side dishes to go with the many barbecue
meats and selected cheese bread pudding, macaroni and cheese, garlic
mashed potatoes, baked beans, creamed corn, cheddar grits, roasted
root vegetables, and steamed vegetables.
Besides the made-to-order barbecue and grill, Dishes is home to
an exhibition bakery that looks out onto the casino floor. Guests
watch bakers make croissants, muffins, apple pies, country biscuits,
all kinds of breads, blueberry cheesecake, cookies, more pies, cream
puffs, and coconut macaroons.
The bakery alone will bring customers into Dishes. When guests see
how tempting the desserts are, they’ll want to come in and
try everything else.
